Hoa Sen Elite Students Transform Final Exam into a World-Class Fine Dining Experience
Moving beyond traditional written exams and classroom presentations, Hoa Sen Elite Program students took part in a unique “practical exam”, directly operating a Fine Dining banquet following international standards at the restaurant practice area.
This activity serves as the final examination for the Food Service Operations Management course and was designed as a practical project to help students apply their professional knowledge in a simulated environment closely aligned with industry standards in the hotel and restaurant sector.
Experiential Learning and Skills-Based Assessment
The Fine Dining was structured as a fully integrated event with complete operational procedures. From preparing the venue and setting up tables to welcoming guests, serving dishes, and coordinating the program, every stage was carried out by students under the guidance of lecturers and industry experts.
Through role rotation, students gained hands-on experience and a deeper understanding of high-end culinary event operations. Beyond applying what they had learned, they strengthened essential competencies such as teamwork, coordination, problem-solving, and professional demeanor, all of which are key elements in today’s service industry.

The Fine Dining featured the direct guidance of Mr. Pham Tuan Anh, Event Service Manager, Park Hyatt Saigon Hotel.
With years of experience in high-end event operations, he guided students through organizational processes, service standards, and quality requirements of the international hospitality industry. Moreover, practical insights from experts helped students gain a clearer understanding of their future work environment and the professional standards required by enterprises.
